New restaurant led by Michelin-star chef to open in Hungary’s fairy tale castle hotel
Led by 2-Michelin-star chef Ádám Mészáros, Clarisse, the new fine dining restaurant of BOTANIQ Castle of Tura, will open on 17 November. The chef has shared that one of his ambitious plans for the upcoming years is to make Clarisse Hungary’s first Michelin-star restaurant in the countryside. Ádám Mészáros also plans to earn Michelin’s sustainability award, the Green Star.
As we reported last month, after a complete renovation between 2016 and 2020, the Neo-Renaissance-style BOTANIQ Castle of Tura opened as a high-quality hotel and event venue. This year,
the mesmerising castle hotel received the Booking.com Traveller Review Awards for 2021 in January and also won the Best European Castle Hotel 2021 award at the prestigious International Travel Awards 2021.
As far as the hotel’s gastronomic repertoire is concerned, so far, guests could enjoy international favourites along with the modern variations of typical Hungarian dishes at the Palmhouse restaurant and could choose from more than 200 sorts of wines and the highest-quality spirits from different parts of the world at Botaniq Bar.
From the forest floor to the canopy
The new fine dining restaurant of BOTANIQ Castle will take the gastronomic experience of the hotel to a whole new level, introducing a concept that is also unique at an international level, writes Turizmus. Clarisse was named after the granddaughter of Sigmund Schossberger, who had the castle built for his wife in 1883.
The restaurant will invite guests to a gastronomic journey that evokes the atmosphere of theatrical evenings and leads through the levels of the magnificent forest surrounding the castle.
The menus were designed to showcase local ingredients, such as trout, mushroom, pear, quail, and venison.“I prefer working with suppliers who do not distribute products manufactured on a large scale but work dedicatedly to produce ingredients as fresh and natural as possible,” argues Executive Chef Ádám Mészáros.
The dishes will represent the different levels of the forest and will be served in a special ceramic tableware set designed by ceramic artist Júlia Néma. Guests will be able to choose from a great variety of wines and cocktails, explains the chef.
The unparalleled experience will be completed by the music of Liszt Ferenc Prize-winning Hungarian folk musician István Pál, the staff’s uniforms designed by Kati Zoób, and a gallery wall consisting of nearly 40 paintings and graphics,
emphasises Travelo.
Wine repertoire
The flavours of the two menus will be complemented and completed by carefully selected wines. Sommelier Tamás Langó has prepared a selection of Hungarian (“Memory of our Mountains”) and international wine specialities (“Adventure of Our Travels”). Clarisse will also offer a special selection of cocktails. Each cocktail will be associated with a particular dish, for example, based on a common ingredient. Another special feature of the works of bartender Gergely Szabó will be that
each cocktail will be named after one of Clarisse Schossberger’s paintings.
The restaurant has already been presented to the press and will open to the public on 17 November.
Guests will be able to book dinners at Clarisse from Wednesday to Saturday, from 6:30 pm to 11:30 pm.
